Berry True Chocolate
A visit to Lillie Belle Farms in Jacskonville, Oregon
I think what artists—especially fiercely individualistic artisans like
Jeff—are really searching for is a connection, a shared
experience, with their audience.
“I only make chocolates I like,” Jeff says, carefully inspecting a
tray of his new Pistachio Toffee chocolate bars after I ask him how
he chooses his flavors. “I’m not going to make something I myself
don’t understand or enjoy eating.” I ask him to explain. “Well, take
chocolate and wine,” he says, his voice growing muffled as he
walks back into the fridge looking for something. “I don’t enjoy
chocolate with wine. I mean, I like wine and I like chocolate, but not
together. I realize a lot of people, including my customers, like the
combination and it tastes good to them, but I just don’t understand it.
So I don’t make it.” He pauses. “Ah, found it.” | CONTINUED
