Berry True Chocolate
A visit to Lillie Belle Farms in Jacskonville, Oregon

“Wow,” I say. “This is amazing.”
"Yeah, yeah. But can you taste the raspberry?” he demands
impatiently. “Of course,” I reply. I look up and see that Jeff is
staring at me intently. “No, no. Can you truly taste it?” he says,
holding up both hands for emphasis. “Can you sense the sweet
notes of the raspberry playing off of the dark chocolate?”
Uncertain, I put the remaining piece in my mouth and try and
concentrate on my palate. Jeff stands silently next to me, his
eyes fixed on mine. As the raspberry and chocolate begin a slow
dance in my mouth, I subconsciously start nodding my head. A
big smile breaks out on Jeff’s face.
“See what I mean?” he says. “OK. Now try this one.” He places
a ball of purple foil in my palm. I unwrap it to find a chocolate that’
s covered with what look like almond chips. “I’d pop the whole
thing in your mouth if I were you.” I do as I’m told and am once
more treated to an instant burst of flavor. But this time it’s
considerably more complex. The chocolate is sugary and fruity,
but it also has sharp notes and an underlying buttery tone.
