“Welcome to the factory!” he suddenly yells as he pushes the door open. I place the chocolates on the table and follow Jeff into the next room, where I’m instantly engulfed in a chocolaty aroma. It’s not the strong, astringent aroma that typically hovers over large chocolate factories—this one is sweeter and more subtle. The lights high up on the ceiling flicker as they come on, illuminating the space. In front of me is a large, dark green marble table, to the left sits a dipping machine. A long, metallic sink lines one side of the wall. In the far left corner stands a big wooden shed painted in colorful odd-shaped patterns. “What’s that there?” I ask, gesturing toward it. “That,” Jeff answers, “is where I store all of my finished chocolates. It’s a walk-in refrigerator I built. She’s a beauty, although it did take a while to get her working right. Managing condensation isn't easy.” I comment on the paint job. “Yeah. That’ s my young daughter Lillie’s handiwork. She and my wife Belle had a lot of fun with it as you can see.” He leads me over to the fridge. “Here, why don’t we bring out some chocolates.”>>>
