Les macarons au chocolat de Ladurée
"Mmmm,” the young woman murmured softly as she set down
her fork and knife, closed her eyes, and tilted her head back
slightly. “Ces macarons sont délicieux!” Ah yes, Ladurée’s
chocolate macaroon. A fine, silky-smooth ganache sandwiched
between two moist, thinly crusted almond cookies. Nothing else
quite like it in the world.
Ladurée was founded as a bakery in 1862 by Ernest Louis
Ladurée, a miller from southwestern France. Located at 16 rue
Royale in the heart of the Madeline, the shop quickly flourished as
the surrounding district developed into one of Paris’s most elegant
business and shopping locales. In 1890 Jeanne Souchard,
Ernest's wife, recognizing the need for more public social outlets
for women, convinced her husband to transform his namesake
into a salon de thé. One of the first of its kind in Paris, the
Ladurée tea room became one of the city’s most popular
gathering places for high society women. >>>
